Ingredients
- 2 aratikaya ( raw bananas / plantains / vazhakkai )
- 3 garlic cloves
- 1/4 tsp turmeric powder
- 1 tsp red chilli powder
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds ( jeera )
- A pinch of asafoetida
- A few curry leaves
- 2 tbsp oil
- Salt to taste
Instructions
- Peel the skin of plantains. Slice them lengthwise into 4 pieces. Then chop them into thin slices. Keep the slices immersed in water till use.
- Heat oil in a pan. Add mustard seeds. When mustard seeds splutter, add cumin seeds.
- When cumin seeds start to crackle, add asafoetida and curry leaves.
- Saute for a couple of seconds and then add sliced garlic.
- Meanwhile drain the plantain slices and keep aside.
- Once garlic turns brown, add in the plantain slices and saute for 2 minutes.
- Add salt, turmeric powder and red chilli powder and mix well.
- Let this cook on low heat, stirring at regular intervals.
- Once the plantain slices get cooked and are roasted well, remove from heat.
- Aratikaya vepudu is now ready to be served!
