Ingredients
- 1 cup chopped beans
- 1/4 cup grated carrot
- 1/4 cup grated coconut
- 6 shallots
- 1 inch piece ginger
- 2 green chillies
- 1/4 tsp turmeric powder
- 1 tsp mustard seeds
- A few curry leaves
- Salt to taste
Instructions
- Chop shallots and ginger finely. Slit the green chillies.
- Heat oil in a pan and add mustard seeds
- When the mustard seeds crackle, add the shallots, ginger and green chillies.
- Then add the chopped beans, grated carrot, salt and turmeric powder.
- Add a little water, cover and cook.
- Once the vegetables are cooked, add grated coconut and fry for just a few minutes.
- Serve beans and carrot thoran as a side dish with rice.
