Ingredients
- 20-25 okras / bhindi / lady’s finger
- 2 onions, medium-sized
- 1 inch piece ginger, chopped
- 1/4 tsp turmeric powder
- 1 tsp cumin seeds / jeera
- 1/2 tsp red chilli powder
- 1/4 tsp garam masala powder
- 1/4 tsp amchur powder
- Coriander leaves for garnishing
- Salt to taste
Instructions
- Wash the okras, dry them and slit vertically into about 2 inch pieces.
- Slice the onions.
- Heat 2.5 tbsp oil in a pan. Add the okras and stir fry on high heat for a couple of minutes.
- Then reduce heat to medium low and fry the okras till they are soft and keep aside.
- Heat around 1 tbsp oil in the same pan. Add cumin seeds and when they change color, add sliced onions and chopped ginger.
- Saute till the onions turn light brown.
- Now add turmeric powder, red chilli powder and salt and fry for a couple of seconds.
- Then add the cooked okras and fry for around 3-4 minutes.
- Finally add garam masala powder and amchur powder and mix well.
- Garnish with chopped coriander leaves and serve hot with rotis or rice.
