Broad Beans Potato Fry / Chikkudukaya Aloo Sabzi

This is a simple broad beans sabzi with potatoes. It is a simple and easy side dish that goes well with rice or chapathis.

a simple broad beans and potatoes stir fry recipe.

Ingredients

  • 2 potatoes medium-sized
  • 1 cup chopped broad beans ( avarakkai / chikkudukaya )
  • 1 onion, sliced
  • 3 cloves of garlic
  • 1/4 tsp turmeric powder
  • 2 green chillies
  • 1/2 tsp mustard seeds
  • 1 tsp broken urad dal ( ulutham paruppu )
  • A pinch of asafoetida
  • 1 dry red chilli
  • A few curry leaves
  • A few coriander leaves
  • 1 tbsp oil
  • Salt to taste

Instructions

  1. Chop the potatoes and broad beans and boil them along with salt and turmeric powder in enough water.
  2. Heat oil in a pan. Add mustard seeds and when they splutter, add dry red chilli, urad dal, asafoetida.
  3. Then add the chopped garlic, chopped green chillies, sliced onions and curry leaves.
  4. Saute till the onions turn translucent.
  5. Then add the cooked potatoes and broad beans. Cook for 4-5 minutes.
  6. Switch off the flame, garnish with chopped coriander leaves and serve hot as a side dish for rice or rotis.
