Ingredients
- 2 potatoes medium-sized
- 1 cup chopped broad beans ( avarakkai / chikkudukaya )
- 1 onion, sliced
- 3 cloves of garlic
- 1/4 tsp turmeric powder
- 2 green chillies
- 1/2 tsp mustard seeds
- 1 tsp broken urad dal ( ulutham paruppu )
- A pinch of asafoetida
- 1 dry red chilli
- A few curry leaves
- A few coriander leaves
- 1 tbsp oil
- Salt to taste
Instructions
- Chop the potatoes and broad beans and boil them along with salt and turmeric powder in enough water.
- Heat oil in a pan. Add mustard seeds and when they splutter, add dry red chilli, urad dal, asafoetida.
- Then add the chopped garlic, chopped green chillies, sliced onions and curry leaves.
- Saute till the onions turn translucent.
- Then add the cooked potatoes and broad beans. Cook for 4-5 minutes.
- Switch off the flame, garnish with chopped coriander leaves and serve hot as a side dish for rice or rotis.
