Gobi sabzi or cauliflower stir fry recipe – an easy and quick stir fry. This recipe has cauliflower florets cooked with Indian spices and is a dry curry.
I got hold of a fresh cauliflower and wanted to make a quick sabzi for dinner to go with chapatis. There are no onions or garlic used in this stir fry and only minimal spices are used.
Cauliflower is one of my favorite vegetables and while aloo gobi sabzi is one of my favorites, I have now started making this cauliflower sabzi often as it can be made quickly and goes well with both rotis and rice.
Cauliflower being rich in vitamin C, vitamin K and high in fiber, it is one of the veggies that can be made regularly.

How to make Gobi Sabzi step by step
- Heat oil in a pan. Add cinnamon, star anise and saute for a couple of seconds. Then add jeera and once it changes color, add the cauliflower florets.
- Add the dry masala spices.
- Mix well.
- Add water. Cover and cook till cauliflower turns soft. Add crushed kasoor methi. Cook for 2 minutes and once all the water dries up, remove from heat. Gobi sabzi is ready to be served.

Gobi Sabzi – Cauliflower Stir Fry recipe
Ingredients
- 3 cups cauliflower florets ( gobi )
- 2 inch cinnamon
- 1 star anise
- 1/2 tsp cumin seeds ( jeera )
- 1/4 tsp red chilli powder
- 1/4 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp garam masala powder
- 1/2 tsp kasoori methi ( dry fenugreek leaves )
- Coriander leaves for garnishing
- 1 1/2 tbsp oil
- Salt to taste
Instructions
- Separate the cauliflower into small florets. Rinse the cauliflower florets in running water.
- Heat oil in a kadai or pan. Add cinnamon and star anise. Saute for a couple of seconds.
- Add cumin seeds. Once cumin seeds change color, add the cauliflower florets and mix.
- Now add in the masala powders – turmeric powder, red chilli powder, coriander powder and garam masala powder along with salt.
- Mix well. Add 3/4 cup water. Cover and cook in medium-low flame till cauliflower turns soft.
- Finally add the crushed kasoori methi and mix well.
- Cook for another 2 minutes on high flame. Once all the water dries up, remove from heat.
- Garnish with chopped coriander leaves. Gobi sabzi is now ready to be served.
Notes
- This sabzi is less spicy. If you want a spicier version, add more chilli powder as per your taste.
