Here is an easy soya chunks stir fry recipe. Soya chunks or soya nuggets is a texturized vegetable protein made from defatted soy flour which is a by-product when extracting soybean oil recipe.
You have to just soak the dry soy nuggets in hot water and then squeeze all the water from them. They become soft and ready to be used in the recipe, imbibing all the flavours in the dish.
Soy chunks are fibrous and high in protein. They are a great substitute for meat, especially for vegetarians.
This stir fry recipe is simple and quick to make and equally delicious. You can have it with rice or just have it as a snack. I bet you cant stop till you have finished off ever one of them on your plate 🙂

Ingredients
- 1 cup soya chunks
- 1 onion, finely sliced
- 2 cloves garlic, finely chopped
- 1 tomato, chopped
- 1/4 tsp turmeric powder
- 1/2 tsp red chilli powder
- 2 tsp coriander powder
- 1 tsp cumin powder
- 1/4 tsp garam masala powder
- 1/2 tsp mustard seeds
- 1/4 tsp fennel seeds
- A few curry leaves
- Salt to taste
Instructions
- Bring water to a boil in a pot. Switch off the flame. Add the soya chunks and let this remain covered for around 20 minutes.
- Drain the water. Squeeze out water from the soya chunks, using your hands and keep it aside.
- Heat a tbsp of oil in a pan. Add mustard seeds and when they splutter, add fennel seeds and curry leaves and saute for a second.
- Then add the sliced onions and chopped garlic.
- Saute till onions turn light brown.
- Now add the chopped tomatoes along with salt, turmeric powder, red chilli powder and coriander powder.
- Fry till tomatoes are mashed and the raw smell goes.
- Add the soya chunks now and mix well. Cover and cook for around 5 minutes, stirring at regular intervals.
- Once all the water dries up, sprinkle garam masala powder and mix well. Switch off the flame.
- Soya chunks stir fry is ready to be served hot.
