Egg maggi noodles recipe is an easy and quick maggi noodles with eggs. This recipe has maggi noodles tossed with scrambled eggs and vegetables to make it filling and tasty.
Noodles is one of the easiest meal that we generally rely on when in a hurry or just plain lazy to prepare an elaborate meal.
I have already posted a maggi noodles with vegetables recipe, where I did not use the tastemaker that comes with the noodles pack.
This maggi noodles version is a variation with scrambled eggs added to enhance the taste of the noodles and also to make it protein-rich. Vegetables too are added which make it a filling breakfast or snack.

Ingredients
- 1 packet maggi noodles
- 1 egg
- 1/4 cup chopped onions
- 1/4 cup chopped carrots
- 2 garlic cloves
- 1/4 cup chopped capsicum ( bell pepper )
- 1/4 tsp red chilli powder
- Maggi tastemaker
- Salt to taste
Instructions
- Chop onion and garlic finely.
- Also chop capsicum and carrots into small cubes.
- Bring 2 cups of water to a boil. Add the noodles along with just a few drops of oil.
- Once noodles turn soft, switch off the flame. Make sure that they are not overcooked as they will turn out mushy.
- Drain the water and keep aside.
- Heat 1 tbsp oil in a pan. Add chopped garlic.
- Once they turn brown, add chopped onions. Saute till they turn translucent.
- Add capsicum and carrots along with red chilli powder.
- Mix well and cook this on a low flame till the vegetables turn soft.
- Whisk the egg in a bowl and it to the vegetables. Scramble the egg and once it is cooked, add the tastemaker and mix well.
- Saute for a minute.
- Finally add the cooked noodles. Mix well till the noodles are coated with the masala.
- Cook for a minute and remove from heat.
- Egg maggi noodles is now ready to be served hot!
