Maggi noodles with vegetables recipe is a quick snack of instant vegetable noodles. Maggi noodles is one of the easiest and quickest dish that can be prepared in just 2 minutes.

Its also one of the favorites especially for kids.

I wanted to try a different maggi noodles recipe without the tastemaker masala that comes along with the noodles. This recipe is an Indian style noodles with vegetables added to make it a tad healthier.

Veg maggi noodles recipe without the tastemaker masala.

Ingredients

  • 2 packets maggi noodles
  • 1/2 cup chopped onions
  • 2 garlic cloves
  • 1/2 cup chopped capsicum / bell pepper
  • 1/2 cup chopped tomatoes
  • 1/4 cup chopped carrots
  • 1/4 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1/2 tsp cumin powder
  • 1/2 tsp garam masala powder
  • Salt to taste

Instructions

  1. Chop onion, garlic and tomatoes finely.
  2. Chop capsicum and carrots into cubes.
  3. Bring 4 cups of water to a boil and add the noodles along with salt and a few drops of oil.
  4. Once the noodles turn soft, switch off the flame. Make sure that they are not overcooked as they will turn out mushy.
  5. Drain the water and keep aside.
  6. Meanwhile, heat 1 tbsp oil in a pan. Add chopped garlic.
  7. Once they start turning brown, add in the chopped onions.
  8. Saute till they turn translucent.
  9. Then add capsicum and carrots along with turmeric powder, red chilli powder, cumin powder and garam masala powder.
  10. Add little salt for the vegetables and mix well.
  11. Cook this on a low flame till the vegetables turn soft.
  12. Now add the cooked noodles along with chopped tomatoes.
  13. Mix well till the noodles are coated with the masala.
  14. Cook for a couple of minutes and remove from heat.
  15. Maggi noodles is now ready to be served hot!
