Koftas can be made with a variety of vegetables and meat like vegetable kofta, paneer kofta, malai kofta, lauki kofta, chicken or lamb kofta. I decided to make koftas with a combination of aloo and palak along with paneer. This dish can be had as a tea-time evening snack or as a starter for a meal. We could also make kofta curry with the koftas that we make which goes well with chappatis, naan and other breads. Paneer, made from milk is rich in protein. Spinach (palak) is rich in antioxidants and is very nutritious.

a deep fried snack using cottage cheese and spinach.
Ingredients
- 2 onions medium-sized
- 3 potatoes medium-sized
- 1 bunch palak ( spinach )
- 1 tbsp ginger paste
- 1 cup grated paneer ( cottage cheese )
- 1/2 tsp turmeric powder ( haldi )
- 2 tsp red chilli powder
- 2 tsp coriander ( dhania ) powder
- 2 tsp cumin powder / jeera powder
- 2 tsp garam masala powder
- Oil for deep frying
- Salt to taste
Instructions
- Finely chop onions and spinach.
- Boil the potatoes and mash them.
- Grate the paneer.
- In a bowl, add the mashed potatoes, chopped onions, chopped spinach and ginger paste.
- To this mixture, add the dry masala powders – turmeric powder, cumin powder, red chilli powder, coriander powder, garam masala powder and salt.
- Take a small amount of this mixture.
- Make a lemon-sized ball out of it.
- Then flatten it and place a small amount of the grated paneer in it.
- Again shape it into a ball and then make a cylindrical roll as a kofta. Apply the same procedure with the rest of the available mixture.
- Heat the oil. Once the oil becomes hot, fry the koftas in small batches till golden brown. Serve hot.
