Spinach Soup ( Palak Soup )

I decided to make a soup and the usual ones that came to mind were tomato soup or vegetable soup. But I wanted to try something different and finally decided upon spinach soup. Spinach is a highly nutritious leafy green vegetable. It is rich in iron. This is a simple and easy to prepare soup that is also nutritious.

a healthy spinach soup.

Ingredients

  • 1 onion
  • 1 tomato
  • 1/2 inch piece ginger
  • 1 cup chopped spinach / palak leaves
  • 1 inch piece cinnamon
  • Black pepper powder to taste
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • Salt to taste

Instructions

  1. Chop onion, tomato and ginger.
  2. In a pressure cooker, add 1 tsp oil or butter and add cinnamon.
  3. Add chopped onions and ginger. Fry till the onions turn translucent.
  4. Add the chopped tomatoes and chopped spinach leaves along with salt, pepper powder, cumin powder and coriander powder.
  5. Saute for a few minutes. Add a little water and pressure cook for around 2 whistles.
  6. Cool this mixture and grind it.
  7. Pour the blended mixture in a pan along with some water and let this simmer for a few minutes.
  8. Serve this healthy soup hot.
  9. You could fry some sliced onions to a golden brown color and use this as a garnish for the soup.
