I decided to make a soup and the usual ones that came to mind were tomato soup or vegetable soup. But I wanted to try something different and finally decided upon spinach soup. Spinach is a highly nutritious leafy green vegetable. It is rich in iron. This is a simple and easy to prepare soup that is also nutritious.

a healthy spinach soup.
Ingredients
- 1 onion
- 1 tomato
- 1/2 inch piece ginger
- 1 cup chopped spinach / palak leaves
- 1 inch piece cinnamon
- Black pepper powder to taste
- 1 tsp cumin powder
- 1 tsp coriander powder
- Salt to taste
Instructions
- Chop onion, tomato and ginger.
- In a pressure cooker, add 1 tsp oil or butter and add cinnamon.
- Add chopped onions and ginger. Fry till the onions turn translucent.
- Add the chopped tomatoes and chopped spinach leaves along with salt, pepper powder, cumin powder and coriander powder.
- Saute for a few minutes. Add a little water and pressure cook for around 2 whistles.
- Cool this mixture and grind it.
- Pour the blended mixture in a pan along with some water and let this simmer for a few minutes.
- Serve this healthy soup hot.
- You could fry some sliced onions to a golden brown color and use this as a garnish for the soup.
