Coconut Rava Ladoo recipe
Ingredients
- 3/4 cup rava ( sooji / semolina )
- 1 cup fresh grated coconut
- 2 green cardamom pods ( elaichi / ellakai )
- 1/4 cup sugar
- 1/2 cup water
- A few cashew nuts
- A few raisins ( optional )
- 2 tsp ghee ( clarified butter )
Instructions
- Heat ghee in a heavy bottomed pan and fry the cashew nuts and raisins till they are golden brown in color.
- Transfer the roasted nuts to a wide bowl.
- Roast the rava in the same pan on medium flame till the raw smell goes and you get a good aroma.
- Remove from heat and transfer the roasted rava to the bowl.
- In the same pan, dry roast the grated coconut for 3-4 minutes on medium flame, making sure not to brown the coconut.
- Transfer the roasted coconut to the bowl.
- Crush the cardamom pods to a fine powder and add it to the roasted mixture.
- Take water in the pan and add sugar. Let this come to a boil. Lower the heat and let the syrup thicken to a single thread consistency.
- Remove from heat and add this sugar syrup to the roasted rava coconut mixture and mix well.
- When the mixture cools down slightly and is still warm, take a small portion of the mixture and press into small round balls using the palm of your hand.
- Continue this for the remaining mixture to form the ladoos.
- Coconut rava ladoo is ready to be served or can be stored in an air-tight container.
Notes
- These are soft ladoos.
- Make sure you do not over roast the rava and coconut.
- This recipe makes around 8 small ladoos.
- The sugar syrup should not be of a very thick consistency, otherwise the ladoos will turn out hard.
- To check for single thread consistency, take a drop of sugar syrup between your forefinger and thumb and pull it apart. If a single thread is formed, then stop boiling the sugar syrup.
