Egg Pepper Gravy

Egg pepper gravy recipe – a simple spiced South Indian style boiled egg gravy. In this recipe, fresh spices including black pepper are ground which gives a lovely spicy taste to this curry.

There is no coconut used in this curry. I love the aroma of freshly ground spices and the aroma of ground black pepper is absolutely heady. Even a pinch of black pepper can enhance a dish.

As for nutrition, black pepper can help improve digestion and also has antibacterial properties. Eggs are rich in protein. I love the fact that eggs can be prepared in so many different ways. This gravy dish can be served with rice, rotis or even dosas.

Egg Pepper Gravy | Muttai Milagu Kuzhambu recipe

A spiced boiled egg gravy recipe.

Ingredients

  • 3 eggs ( muttai )
  • 1 onion large
  • 2 small tomatoes
  • 1 inch piece ginger
  • 5 garlic cloves
  • 1 dry red chilli
  • 1 1/2 tbsp black pepper corns
  • 1/4 tsp turmeric powder
  • 2 tsp coriander powder
  • 1 tsp fennel seeds
  • 1/2 tsp mustards seeds
  • 1/2 tsp cumin seeds
  • 1 inch piece cinnamon
  • 1 bay leaf
  • 2 cloves
  • 1 1/2 tbsp oil
  • Coriander leaves for garnishing
  • Salt to taste

Instructions

  1. Boil the eggs and remove the shells. Make 2-3 long slits on the boiled eggs and keep aside.
  2. Roughly chop onions, garlic and ginger. Finely chop tomatoes.
  3. Heat 1 tbsp oil in a pan. Add cloves and cinnamon. Saute for a minute. Then add the chopped onions, garlic and ginger.
  4. Fry till onions turn golden brown.
  5. Add black pepper and fry for a minute. Remove from heat. Let this onion mixture cool down and then grind it to a paste.
  6. Heat 1/2 tbsp oil in a pan. Add mustard seeds. When mustard seeds splutter, add cumin seeds and dry red chilli.
  7. When cumin seeds crackle, add fennel seeds and saute for a few seconds.
  8. Add the chopped tomatoes and cook for around 2-3 minutes till tomatoes turn soft and pulpy.
  9. Now add in the ground onion mixture and mix. Add salt, turmeric powder and coriander powder and fry for a minute.
  10. Add 1/2 cup water. Now slide in the boiled eggs.
  11. Let the gravy cook on medium-low heat for 5-6 minutes or till it thickens to desired consistency.
  12. Remove from heat and garnish with chopped coriander leaves.
  13. Egg pepper gravy is ready to be served.
