Aval Kesari | Poha Kesari

Aval Kesari or Poha Kesari recipe – a delicious sweet recipe using flattened rice flakes / beaten rice. This is one of the easiest sweets that you can prepare in a few minutes.

I usually prepare red aval ladoo using red rice flakes.

A few weeks back I was getting ready to prepare rava kesari when I realized that there was not enough semolina to make the sweet.

Well, one goes to any length to satisfy a sweet craving. So wih one look on the rice flakes jar, I made up my mind to try kesari with aval. It turned out delicious and you will not be able to guess that it is made using aval.

Aval Kesari recipe - easy and quick South Indian sweet using poha / rice flakes. This easy and delicious dessert recipe can be made in minutes.

It takes just around 15 minutes to make this delicious South Indian sweet recipe. I have made this aval kesari a few times now and it is one of the easiest desserts that you can prepare when you have some sudden guests coming over or when you have a sweet craving! This sweet can also be prepared for krishna jayanthi / gokulashtami festival.

How to make Aval Kesari step by step

  1. Dry roast aval in a pan till you get a good aroma.roasting aval for aval kesari
  2. Grind the roasted aval to a slightly coarse consistency. In a pan, heat 1 tbsp of ghee. Fry the cashew nuts and raisins in ghee and set these aside. In the same pan, bring 2 1/2 cups water to a boil. Reduce the flame. While continuously stirring the contents of the pan with one hand, simultaneously pour the ground aval into the boiling water.   3. After 2 minutes, add the sugar and mix well. Mix the kesari powder with a few drops of water. Add this to the aval and mix well. Add another tbsp of ghee and mix well. Finally, add the fried cashew nuts and raisins.adding sugar and ghee for poha kesari
  4. Keep stirring till the ghee separates. Remove from heat. Aval kesari is ready to be served.

Aval Kesari is one of the easiest sweets that you can prepare in minutes. You can’t guess this delicious sweet is made from rice flakes.

Ingredients

  • 3/4 cup white aval ( poha / rice flakes (thin / thick variety) )
  • 1/2 cup sugar
  • 2 tbsp ghee ( or clarified butter )
  • 5-6 cashew nuts
  • 5-6 raisins
  • A pinch of kesari powder ( food color )

Instructions

  1. Dry roast aval in a pan till you get a good aroma.
  2. Grind the roasted aval to a slightly coarse consistency.
  3. In a kadai or pan, heat 1 tbsp ghee. Add the broken cashew nuts and raisins and fry them till they change color to golden brown. Remove the fried nuts and raisins and set aside.
  4. In the same pan, add 2 1/2 cups water and bring it to a boil.
  5. Once the water boils, reduce the flame. Add the ground aval gradually while continously stirring the mixture with the other hand to avoid lumps.
  6. Mix well and let this cook on a slow flame for 2 minutes. Then add the sugar and mix well. Mix the kesari powder with a tsp of water and add it to the aval mixture. Stir well and let this cook for a minute.
  7. Then add the remaining ghee along with the fried cashew nuts and raisins. Keep stirring till the ghee separates. Remove from heat. Aval kesari is now ready to be served.

Notes

  • Substitute kesari color with a few strands of saffron soaked in a tbsp of warm milk.
  • Make sure you dont over roast the rice flakes.
