Avarakkai Muttai Poriyal | Broad Beans Egg Stir Fry

Avarakkai Muttai Poriyal recipe is broad beans and scrambled eggs stir fry. Avarakkai is a fiber rich vegetable and eggs are protein-rich.

Adding eggs can liven up a dish and this recipe can be a welcome alternative to the usual avarakkai poriyal.

Avarakkai Muttai Poriyal recipe

a South Indian broad beans and eggs stir fry recipe.

Ingredients

  • 2 cups finely chopped avarakkai / broad beans
  • 3 muttai / eggs
  • 1 onion medium-sized
  • 1 tomato medium-sized
  • 3 garlic cloves
  • 1/2 tsp mustard seeds
  • 1 tsp broken urad dal / ullutham paruppu
  • 1/4 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1/2 tsp garam masala powder
  • A pinch of asafoetida
  • A few curry leaves
  • Salt to taste

Instructions

  1. Chop onion, garlic and tomato finely.
  2. Trim the two end of avarakka and remove the strings on either side. Then chop avarakkai finely.
  3. Heat oil in a pan. Add mustard seeds.
  4. When mustard seeds splutter, add urad dal, asafoetida and curry leaves.
  5. Fry till the dal turns light brown.
  6. Add chopped onions and garlic.
  7. Saute till onions turn translucent.
  8. Now add chopped tomatoes along with salt, turmeric powder and red chilli powder.
  9. Fry till tomatoes turn soft and are mashed.
  10. Then add chopped avarakkai along with 3/4 cup water.
  11. Cover and cook on medium heat till avarakkai turns soft and the water dries up.
  12. Finally add beaten eggs and mix well.
  13. Keep stirring to scramble the eggs.
  14. Once the eggs get cooked, add garam masala powder and mix well.
  15. Remove from heat and serve hot with rice or rotis.
