Keerai Rice | Keerai Sadam

Keerai sadam or keerai rice is a healthy greens rice recipe. Its a simple one pot dish loaded with nutrition from the greens.

Aren’t one-pot dishes great time savers. You can make them quickly and you are ready to pack them for lunch on busy days or make them when feeling lazy to prepare an elaborate meal.

This dish is of a mashed consistency and is a comfort food. You could use any type of greens like mulai keerai / amaranth leaves, thandu keerai or arai keerai.

This simple and healthy one pot meal is very easy to prepare and can be served with yogurt and pickles or papadums or a simple potato poriyal.

Keerai Sadam – Keerai Rice recipe

a healthy one pot meal using rice and greens.

Ingredients

  • 1 1/2 cups rice
  • 4 cups greens, chopped
  • 1 onion, medium-sized
  • 1 tomato, medium-sized
  • 3 dry red chillies
  • 1 tsp ginger paste
  • 1 tsp mustard seeds
  • 1/4 tsp fenugreek seeds
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 tbsp oil
  • Salt to taste

Instructions

  1. Wash and soak the rice for around 10 mins.
  2. Finely slice the onion. Chop tomato finely.
  3. Wash greens thoroughly and roughly chop them.
  4. Heat oil in a pressure cooker. Add mustard seeds. When mustard seeds splutter, add cumin seeds and dry red chillies.
  5. When cumin seeds crackle, add fenugreek seeds and saute for a second.
  6. Add chopped onions and ginger paste.
  7. Saute till onions turn light brown.
  8. Now add chopped tomatoes along with salt, turmeric powder and coriander powder.
  9. Fry for a minute and add the chopped greens.
  10. Saute for a couple of minutes.
  11. Drain the water from the soaked rice. Now add the rice along with 5 cups water and pressure cook for 4 whistles.
  12. Once the pressure gets released from the cooker, healthy keerai rice is ready to be served hot.
