Beans Moong Dal Stir Fry | Beans Paruppu Poriyal

Beans moong dal is a simple stir fry recipe of french beans with split yellow gram.

Grated coconut is usually added to enhance the flavor of beans poriyal / sabzi in South Indian cooking. It is a great accompaniment to sambar or even rasam.

For a change, beans can also be combined with moong dal. It is a delightful combination, with the dal giving the dish an added nutrition.

Ingredients

  • 2 cups chopped french beans
  • 1/4 cup moong dal / split yellow gram / pasi paruppu
  • 1 tsp mustard seeds
  • 2 dry red chillies
  • 1 tsp cumin seeds
  • 1 tsp broken urad dal / ulutham paruppu
  • A pinch of asafoetida
  • 1/4 tsp turmeric powder
  • Salt to taste

Instructions

  1. Boil moong dal with turmeric powder in enough water till it turns soft, but not mashed.
  2. Heat 2 tsp oil in a pan. Add mustard seeds and when they crackle, add cumin seeds, urad dal and asafoetida.
  3. Once urad dal turns brown, add dry red chillies and curry leaves and stir for a few seconds.
  4. Now add the chopped beans along with salt and turmeric powder.
  5. Add little water, cover and cook the beans till it turns soft, stirring at regular intervals.
  6. Then add the cooked moong dal, mix well and cook for 3-4 minutes.
  7. Serve hot as a side dish for rice.
