A simple and healthy mildly spiced stir fry using beetroots.
Ingredients
- 1 cup grated beetroot
- 1/2 tsp mustard seeds
- 2 green chillies
- 1 tsp grated ginger
- 1 tsp urad dal
- A pinch of asafoetida
- 1 tsp sugar
- A few curry leaves
- Salt to taste
Instructions
- Grate beetroot and ginger. Slit the green chillies lengthwise.
- In a pan, heat 1 tbsp oil. Add mustard seeds and asafoetida.
- When the mustard splutters, add urad dal.
- When dal turns brown, add curry leaves, ginger and green chillies.
- Now add the grated beetroot along with salt and sugar.
- Sprinkle a little water, cover and cook till beetroot turns soft.
- Beetroot fry is ready to be served with rotis or rice.
