Beetroot poriyal This is a simple South Indian style side dish recipe that goes well with rice and rotis. The only messy part in this preparation is the grating of the beets. But once you have done that, preparing this recipe is very easy.

A simple and healthy mildly spiced stir fry using beetroots.

Ingredients

  • 1 cup grated beetroot
  • 1/2 tsp mustard seeds
  • 2 green chillies
  • 1 tsp grated ginger
  • 1 tsp urad dal
  • A pinch of asafoetida
  • 1 tsp sugar
  • A few curry leaves
  • Salt to taste

Instructions

  1. Grate beetroot and ginger. Slit the green chillies lengthwise.
  2. In a pan, heat 1 tbsp oil. Add mustard seeds and asafoetida.
  3. When the mustard splutters, add urad dal.
  4. When dal turns brown, add curry leaves, ginger and green chillies.
  5. Now add the grated beetroot along with salt and sugar.
  6. Sprinkle a little water, cover and cook till beetroot turns soft.
  7. Beetroot fry is ready to be served with rotis or rice.
