Drumstick leaves stir fry / murungai keerai poriyal recipe is a healthy South Indian style side dish using drumstick leaves. In this recipe murungai keerai / drumstick leaves are stir fried and flavored with fresh grated coconut.
These green leafy vegetables are highly nutritious as they are a rich source of calcium and iron. They are a good source of vitamin A and vitamin C.
I love the unique flavor of drumstick leaves. But I hardly make them as I rarely get to see them in the market.
So when I was able to get hold of these leaves, I made this simple and quick stir fry / poriyal as a side dish for rice and sambar.
Drumstick leaves have a slight bitterness in taste. The addition of coconut does to an extent mask the bitterness of these leaves.

Drumstick Leaves Stir Fry recipe
Ingredients
- 3 cups packed murungai keerai ( drumstick leaves )
- 1/4 cup grated coconut
- A pinch of turmeric powder
- 1/2 tsp mustard seeds
- 2 tsp broken urad dal ( ulutham paruppu )
- A pinch of asafoetida
- 3 dry red chillies, broken
- A few curry leaves
- 2 tsp oil
- Salt to taste
Instructions
- Pick the drumstick leaves from their stems.
- Wash the leaves thoroughly and set aside.
- Grate the fresh coconut.
- For the seasoning, heat oil in a pan.
- Add mustard seeds.
- When mustard splutters, add urad dal, asafoetida, dry red chillies and curry leaves.
- Saute till urad dal turns brown.
- Now add the cleaned and washed drumstick leaves.
- Add salt and turmeric powder and mix well.
- Sprinkle little water and let the greens cook on low flame.
- Keep stirring at intervals and cook till they become tender.
- Finally add the grated coconut.
- Stir for a minute on medium flame and remove from heat.
- Drumstick leaves stir fry is ready to be served as a side dish for rice.
