a South Indian snake gourd stir fry recipe.
Ingredients
- 2 cups chopped pudalangai ( snake gourd )
- 1 onion medium-sized
- 1/2 tsp mustard seeds
- 1 tsp fennel seeds ( sombu / saunf )
- 1/4 tsp turmeric powder
- 1 tsp red chilli powder
- 1/2 tsp garam masala powder
- 1 tbsp oil
- Salt to taste
Instructions
- Chop the onion.
- Peel the skin of pudalangai, remove the seeds and chop into small pieces.
- Cook the pudalangai in a little water along with salt till it turns soft.
- Heat oil in a pan. Add mustard seeds.
- When mustard splutters, add fennel seeds and saute for a couple of seconds.
- Add the chopped onions and fry till they become golden-brown.
- Now add the cooked pudalangai along with turmeric powder, red chilli powder and garam masala.
- Let this fry for 3-4 minutes till the pudalangai pieces get coated with the masalas.
- Snake gourd fry is ready to be served as a side dish for rice or rotis.
