A simple snake gourd and pepper stir fry recipe.
Ingredients
- 1 1/2 cups chopped snake gourd
- 1 onion
- 2 tsp black peppercorns
- 1 tsp cumin seeds
- 1/2 tsp mustard seeds
- 1 dry red chilli
- 1/2 tsp broken urad dal
- A few curry leaves
- 1 tbsp oil
- Salt to taste
Instructions
- Peel the snake gourds and discard the seeds. Chop the snake gourds into small pieces.
- Dry roast cumin seeds and peppercorns till the cumin seeds change color.
- Pound them to a coarse powder and keep aside.
- In a pan, heat oil. Add mustard seeds and when they splutter, add dry red chilli and broken urad dal.
- Fry till urad dal becomes brown.
- Now add the chopped onion and curry leaves.
- Saute the onions till they turn soft.
- Then add chopped podalangai along with salt and little water.
- Cover and let the podalangai get cooked, stirring in-between at intervals.
- Once the poriyal becomes dry, finally add the cumin pepper powder and fry for a minute and remove from heat.
- Snake gourd pepper fry is ready to be served.
