How to make Vendakkai Pepper Fry step by step
- Wash the okras and dry them using a towel. Then cut them into thin round slices.
- Heat oil in a pan. Add cumin seeds and when they change color add crushed garlic cloves and slit green chillies and saute till garlic turns light brown in color.
- Add the sliced okras. Fry for a minute and then add salt.
- Cook the okras on a slow flame till they turn soft. Keep stirring occasionally. Once okras are cooked, sprinkle black pepper powder and stir fry on a high flame for a minute and remove from heat.
- Vendakkai pepper fry is now ready to be served as a side dish for rotis or rice.

Vendakkai Pepper Fry – recipe
Ingredients
- 1 1/2 cups thinly sliced vendakkai / okra / bhindi
- 3 garlic cloves
- 1 green chilli
- 1/2 tsp cumin seeds / jeera
- 1 tsp black pepper powder
- 1 tbsp oil
- Salt to taste
Instructions
- Rinse the okras. Pat dry the okras with a towel or a paper napkin. Chop the stalk and tail of the okra and discard them.
- Then cut the okras into thin round slices.
- Slit the green chilli lengthwise. Crush the garlic cloves.
- Heat oil in a non-stick pan. Add cumin seeds.
- When cumin seeds change color to brown, add the slit green chilli and crushed garlic cloves.
- Fry till garlic turns light brown in color.
- Now add the sliced okras and saute for a minute.
- Add salt and mix well. Let the okras cook on a slow flame till they lose the stickiness completely and turn soft. Keep stirring at regular intervals to ensure even frying of the okras.
- Finally add the black pepper powder. Stir fry on a high flame for a minute and then remove from heat.
Notes
- Don’t miss the step to dry the okras completely before frying it. This will reduce the sliminess of the okras. You could either wash the okras and dry them with a towel or you could keep the okras aside till they dry completely and then use them in the recipe.
- This recipe is lightly spiced. If you want a spicier version adjust the quantity of black pepper powder according to taste.
