Ulli karam / erra karam is a spicy Andhra style onion chutney recipe. Ulli karam, prepared with onions and red chillies, is generally served as a side dish for dosas or idlis. This chutney is also used for karam dosa.
The chutney is spread over the dosa along with ghee and the dosa is then stuffed with potato masala. Its a simple and easy chutney that can be prepared quickly.

Ingredients
- 2 onions large
- 4 garlic cloves
- 6 dry red chillies
- 8-10 curry leaves
- Tamarind, gooseberry-sized
- 2 tsp oil
- Salt to taste
Instructions
- Roughly chop onions and garlic.
- Heat oil in a pan. Add dry red chillies, garlic, curry leaves and onions.
- Fry till onions turn golden-brown. Add tamarind and saute for a minute.
- Cool this mixture and then grind into a fine paste by adding salt.
- Ulli karam chutney is now ready to be served as a spread for karam dosas or as a side dish for idlis and dosas.
