Sweet corn curry recipe – a delicious curry using sweet corn kernels. This sweet corn curry is mildly spiced and is flavored with coconut milk.
I have always eaten sweet corn just as a snack like sweet corn chaat.
This time when I saw fresh sweet corns in the market, I decided to try out a curry with sweet corn though I was skeptical as to how it would turn out. But I totally loved this sweet corn curry that blends well with coconut milk and the spices.
I rarely add coconut milk in curries though I do add fresh grated coconut in curries especially the South Indian ones like drumstick kootu or in creamy mushroom korma. In this recipe I have used fresh sweet corn. I removed the husk and silk from the sweet corn, boiled the sweet corn kernels and then used them in the recipe. Onions and tomatoes are used in this curry along with Indian spices and of course coconut milk. This vegan and gluten-free curry tastes good with rotis and rice.
In addition to being naturally sweet and juice, sweet corn kernels are nutritious. They are not only a good source of dietary fiber but also a great source of Vitamin B6 and Vitamin C. Lets move on to the easy recipe for sweet corn curry.
how to make sweet corn curry step by step
- Heat oil in a pan. Add onions, ginger and garlic.
- Fry till onions turn light brown in color.
- Grind the fried onions to a fine paste by adding very little water. Heat oil in the pan. Add whole garam masala. Then add jeera and once it changes color, add the ground onion paste. Fry till golden brown in color.
- Now add chopped tomatoes and fry for a couple of minutes.
- Add the spice powders and salt.
- Mix well. Add sweet corn kernels and the ground sweet corn.
- Add water and cook for two minutes. Then add coconut milk and cook for 4-5 minutes. Sweet corn curry is now ready to be served.

Description

Ingredients
- 1 1/2 cups sweet corn kernels
- 1 onion medium-sized
- 1 tomato medium-sized
- 1 tsp finely chopped garlic
- 1/2 tsp finely chopped ginger
- 1/2 cup coconut milk
- 1 bay leaf
- 1 inch piece cinnamon
- 3 cloves
- 1/2 tsp cumin seeds / jeera
- 1/4 tsp turmeric powder
- 1/2 tsp red chilli powder
- 1 tsp coriander powder
- 1/2 tsp garam masala powder
- 4 tsp oil
- Salt to taste
Instructions
- Separate the sweet corn kernels and boil the sweet corn kernels with enough water till they turn soft or you can pressure cook the kernels in enough water for 4 whistles.
- Meanwhile, finely chop onion, tomato, ginger and garlic.
- Take 1/2 cup of the boiled sweet corn kernels and grind them to a fine paste without adding water. This is done for the purpose of thickening the gravy.
- Heat 1 tsp oil in a pan. Add chopped onions, ginger and garlic.
- Fry till onions turn light brown in color.
- Remove from heat and once it cools down slightly, grind this onion-ginger-garlic to a fine paste by adding very little water.
- In the same pan, add the remaining oil. Add bay leaf, cinnamon and cloves and saute for a couple of seconds.
- Then add cumin seeds and once they start changing color, add in the ground onion paste.
- Fry til it turns golden brown in color.
- Now add the chopped tomatoes and fry for 2 minutes on a medium-low flame.
- Add turmeric powder, red chilli powder, coriander powder, garam masala powder and salt.
- Mix well and fry for a minute.
- Add the ground sweet corn as well as the sweet corn kernels and mix.
- Add 1/2 cup water and cook for 2 minutes.
- Finally add the coconut milk and let it simmer on low heat for 4-5 minutes. Remove from heat.
- Sweet corn curry is now ready to be served with rotis / chapatis or rice.
Notes
- Alternatively, you can pressure cook the corn cobs in enough water in a pressure cooker for 4 whistles. Once they cool down, you can remove the sweet corn kernels.
