Capsicum Peanut Stir Fry

Here is a quick and easy capsicum peanut stir fry recipe. In this recipe roasted peanuts give a nutty flavor to the bell peppers that are cooked with few spices.

After the capsicum masala curry recipe that I had posted earlier, I wanted to try a simpler sabzi that used the combination of capsicums and peanuts.

This stir fry is easy to make and if you love peanuts, this curry is for you. Peanuts lend a nutty flavor to crunchy capsicums and this simple side dish recipe goes well with both rotis and rice.

Peanuts are rich in antioxidants and are also a good source of proteins and vitamin E. They are also good for weight loss. Bell peppers are also nutritious vegetables and are a great source of vitamin C.

How to make Capsicum Peanut Stir Fry step by step

  1. Chop capsicums.capsicum for stir fry
  2. Add peanuts to a pan.peanuts for stir fry
  3. Dry roast peanuts till it changes color.roasted peanuts for stir fry
  4. Grind the roasted peanuts to a slightly coarse powder.roasted peanut powder
  5. Heat oil in a pan. Add cumin seeds and when they change color add the chopped onions and green chilli and fry till they turn translucent.fry onions for capsicum peanut stir fry
  6. Add chopped capsicums and fry for a couple of minutes.fry capsicum for stir fry
  7. Then add masalas to the pan and mix well. Cover and cook till capsicum turns soft. Keep stirring occasionally.add masalas for capsicum peanut stir fry
  8. Finally add ground peanuts to the pan and mix well.add roasted peanut powder
  9. Stir on high heat for a couple of minutes.mix peanut powder for capsicum peanut stir fry
  10. Capsicum and peanuts stir fry is ready to be served.

    Capsicum Peanut Stir Fry recipe

    a quick and delicious stir fry recipe using bell peppers and peanuts.

    Ingredients

    • 2 1/4 cups chopped capsicums ( bell peppers / shimla mirch )
    • 1 green chilli
    • 1/4 cup peanuts ( ground nuts )
    • 1 small onion
    • 1/2 tsp red chilli powder
    • 1/4 tsp turmeric powder
    • 1/2 tsp coriander powder
    • 1/2 tsp cumin seeds ( jeera )
    • 1 1/2 tsp oil
    • Salt to taste

    Instructions

    1. Cut the capsicums into small cubes. Finely chop the onion. Slit the green chilli.
    2. Dry roast peanuts in a pan in medium flame till they change color.
    3. Cool the roasted peanuts and grind it to a coarse powder consistency.
    4. Heat oil in a pan. Add cumin seeds.
    5. When cumin seeds slightly change color, add the chopped onions and green chilli.
    6. Fry till onions turn translucent.
    7. Then add the chopped capsicum. Fry for 2 minutes.
    8. Now add salt, turmeric powder, red chilli powder and coriander powder. Mix well.
    9. Cover and cook till the capsicum turns soft. There is no need to add water. Keep stirring occasionally.
    10. Finally add the roasted peanut powder and stir fry for a couple of minutes till the moisture dries up.
    11. Capsicum peanut stir fry is ready to be served as a side dish for rotis or rice.

    Notes

    • I have used both green and red bell peppers. You could substitute the red ones with just the green bell peppers.
