Kathirikkai Poondu Poriyal | Brinjal Garlic Stir Fry

Kathirikkai poondu poriyal or Garlic brinjal poriyal is a stir fry recipe of eggplants and sliced garlic.

A wonder herb, garlic can lend such a fantastic flavor and aroma to a dish. Apart from being able to enhance flavors, it also has antiseptic and antibacterial properties.

Now onto this simple recipe that uses very few ingredients and the star of this dish is as you guessed, garlic! I used the long, thin light purple brinjals for this recipe. This kathirikai poriyal goes very well as a side dish for rotis or rice.

Kathirikkai Poondu Poriyal – Brinjal Garlic Stir Fry recipe

Kathirikkai Poondu Poriyal – a simple side dish of eggplants flavored with garlic.

Ingredients

  • 250 gms tender purple brinjals ( kathirikkai / baingan )
  • 8-10 garlic cloves
  • 1/4 tsp turmeric powder
  • 1 1/2 tsp red chilli powder
  • 1/2 tsp mustard seeds
  • A few curry leaves
  • 1 tbsp oil
  • Salt to taste

Instructions

  1. Cut the brinjals lengthwise into long strips and keep immersed in water till use.
  2. Chop garlic into long thin slices.
  3. Heat oil in a pan. Add mustard seeds.
  4. When mustard seeds splutter, add curry leaves and sliced garlic.
  5. Saute till garlic turns brown.
  6. Now add brinjals along with salt, turmeric powder and red chilli powder.
  7. Keeping the flame on medium low heat, fry the brinjals in the oil at regular intervals, till they turn soft.
  8. Once brinjals turn soft, switch off the flame.
  9. Serve garlic brinjal fry as a side dish for rice or rotis.
