Okra potato stir fry / aloo bhindi sabzi recipe is a simple stir fry of okra and potatoes. This is a North Indian style side dish recipe that is easy to make.
Okras and potatoes go so well together and I absolutely loved this combination.
I prepared it for lunch to go with lasooni dal tadka and rice.
This is a simple stir fry made flavorful with the addition of a few spices.
Okras are a great source of vitamin C and dietary fiber. Potatoes too are a good source of vitamin C.

I don’t really crave for any bhindi dish but I love the mix of aloo and bhindi which is delicious.
This sabzi goes very well with a dal and rice combination or even with rotis or chapatis. Lets move on to the recipe for easy bhindi aloo sabzi or okra potato stir fry.
How to make Aloo Bhindi Sabzi step by step
- Firstly, chop the okras and potatoes. Heat oil in a pan and add finely chopped onions and garlic.
- Fry till onions turn soft.
- Then add the chopped okras.
- Add the cubed potatoes.
- Add all the spice powders and salt.
- Mix well.
- Cook on a medium low flame, stirring occasionally till the potatoes and okras turn soft. Finally add garam masala powder and mix well. Stir fry on high heat for a minute and remove from heat.
- Aloo bhindi sabzi is ready to be served hot.

Okra Potato Stir Fry – Aloo Bhindi Sabzi recipe
Ingredients
- 3 cups chopped okra ( vendakkai or bhindi or lady’s finger )
- 1 cup cubed potatoes ( aloo )
- 1 onion medium-sized
- 3 small garlic cloves
- 1/2 tsp red chilli powder
- 1/2 tsp cumin powder
- 1/4 tsp turmeric powder
- 1/2 tsp garam masala powder
- 2 tbsp oil
- Salt to taste
Instructions
- Wash the okras and dry them using a towel. Chop the okra into 2 inch pieces. Peel and chop potato into bite-sized cubes. Also finely chop onion and garlic.
- Heat oil in a pan. Add chopped onions and garlic.
- Fry till the onions turn translucent and soft.
- Now add the chopped okra.
- Add the potato cubes.
- Then add salt, turmeric powder, red chilli powder and cumin powder.
- Mix well and fry in medium flame till the vegetables are cooked, without adding water, stirring occasionally.
- Finally add garam masala powder and mix well. Stir fry on high heat for a minute. Remove from heat. Aloo bhindi sabzi is ready to be served as a side dish for rice or rotis.
