Soya chunks bhurji – an easy soya chunks scrambled dry curry recipe. This is a dry curry made with soya chunks which are protein-rich.
I end up with soya chunks kurma when I think of preparing some curry with soya.
This time I wanted to try out bhurji recipe with soya chunks as paneer bhurji is one of my favorite recipes.
The curry turned out delicious and it takes very less time to prepare especially if you already have some pre-soaked soya chunks available with you. It goes well as a side dish for rotis or rice.

Soya chunks is one of the best alternative to meat dishes. So if you are planning on a healthy protein rich side dish do try this simple and easy soya bhurji recipe.

Soya Chunks Bhurji recipe
Ingredients
- 1 cup soya chunks ( soya nuggets )
- 1 onion medium sized
- 3 garlic cloves
- 1 tomato large
- 1/2 tsp garam masala powder
- 1/2 tsp red chilli powder
- 1/4 tsp turmeric powder
- 1/2 tsp coriander powder
- 1/2 tsp cumin seeds ( jeera )
- Coriander leaves for garnishing
- 1 1/2 tbsp oil
- Salt to taste
Instructions
- Soak soya chunks in hot water for around 20 minutes.
- Drain water and when it cools down, squeeze all the water from the soya chunks.
- Chop the soya chunks into small pieces as I have done here.
- Alternatively pulse the soya chunks a couple of times in a mixer.
- Chop onion, tomatoes and garlic finely.
- Heat oil in a pan. Add cumin seeds.
- When cumin seeds crackle, add chopped onions and garlic.
- Saute till onions turn light brown.
- Now add the chopped tomatoes and let it cook till the tomatoes get mashed.
- Reduce heat and add salt, turmeric powder, red chilli powder, coriander powder and garam masala powder.
- Fry for a minute. Add chopped soya chunks and let this cook for 3-4 minutes, stirring occasionally.
- Remove from heat and garnish the bhurji with chopped coriander leaves.
- Soya chunks bhurji is ready to be served hot with chapathis or rice.
