Easy spinach dal / pressure cooker dal palak recipe – an easy to make Indian one pot dal in pressure cooker. This recipe uses yellow mung lentils with spinach and is delicious as well as healthy.
I love simple comforting dal chawal for lunch and especially yellow moong dal, as it doesn’t require soaking and cooks very fast. Also, I also usually try to add some veggies to dal to make it more healthy as in beetroot dal.
Leafy greens are so nutritious but some kids don’t like to eat them as a plain sabzi. When added in the form of this spinach dal, the greens turn soft and blend with the lentils, which make it more tasty and you also get the nutrients from palak.
I have used pressure cooker for the whole process as it is gets done quicker. Just chop all the veggies and then pressure cook them with the lentils and dal palak is done in a jiffy! I don’t do the tadka separately and instead do the tempering before adding the veggies. I usually use this method to make my quick dal palak as it is simpler and perfect for the lazy me. This dal goes well with rice and is also a good side dish for chapathis / rotis or phulkas.
